Getting Started

Pour the base into a pot over medium heat. Fill the base jar 3/4 of the way with water and add to pot. Add 2 teaspoons of protein base paste chicken, shrimp, or vegetable. Bring to a boil. Cover, reduce heat, and let simmer for 30 min. Then use as you like: braised chicken, gumbo, Creole shrimp scampi, alfredo and more!”

Creole Shrimp Scampi

Ingredients
  • 12 oz peeled/deveined large shrimp
  • 1 tablespoon fresh Italian parsley.
  • 8 oz angel hair pasta (or your favorite)
  • 1 cup diced fresh tomatoes or canned
Steps

Thaw shrimp, if needed. Bring water to boil for pasta. Chop parsley finely. Juice lemon (1 tablespoon).

Place olive oil in large sauté pan, allow pan to get hot. Cook pasta following package instructions.

Sprinkle shrimp lightly with salt and pepper add to hot sauté pan stir in tomatoes, wine, garlic, and pepper flakes, if using; cook 2–3 minutes just until shrimp turn pink and opaque.

Stir in Miller Sisters’ Creole cooking Base and lemon juice. Finish with a teaspoon of butter (optional). Top with parsley and serve over pasta.....ENJOY!!

Creole Braised Chicken

Ingredients
  • One 3 to 4-pound chicken, cut into 8 pieces
  • Kosher salt
  • Freshly ground pepper
  • Olive oil
  • 2 tablespoons unsalted butter
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1/2 cup diced ham
  • 5 medium tomatoes, cut into wedges
  • 1 cup dry white wine, such as Sauvignon Blanc (optional)
  • 2 tablespoons finely chopped parsley, (optional)
Steps

Dry chicken well with paper towels. Season with 2 teaspoons of salt and 1 teaspoon black pepper. Sear the chicken pieces lightly all over.

In a large pan set over high heat, heat 1/4 cup olive oil.

Place chicken in a single layer skin-side-down until browned all over, 3 to 5 minutes per side.

Add onion and sauté on medium heat until they begin to soften, about 5 minutes.

Stir in garlic, and 1/2 teaspoon salt; continue to sauté until translucent, 5 to 8 minutes more.

Add the ham, tomato wedges, and wine; cook for 5 minutes.

Add Miller Sisters’ Ceole cooking Base.Return chicken to the pot in a single layer, skin-side-up. Bring to a boil and simmer on low for 20 minutes, or until chicken has an internal temperature of 165°F.

Serve with rice or sweet potatoes and a salad or collard greens. Spoon sauce over rice and chicken, garnish with parsley (if using), and serve with remaining sauce on the side.

Shrimp Etouffee

Ingredients
  • 2 tbsp. butter
  • 2 tbsp. vegetable oil
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery ribs, chopped
  • 3 cloves garlic, minced
  • 2 green onions, thinly sliced, plus more for garnish
  • 1 tsp. sweet paprika
  • 2 tbsp chopped parsley
  • Kosher salt
  • Freshly ground black pepper
  • 2 cups shrimp stock ( 2 cups of water 2 tsp shrimp base)
  • 1 bay leaf
  • 1 1/2 lb. shrimp, shelled and deveined
  • White rice, for serving
Steps

In a medium or large pan placed on medium heat, combine butter and oil.

When butter is melted and foaming, add onion, pepper, and celery and cook, stirring frequently, until softened, 6 to 8 minutes.

Stir in garlic, green onions, and the Miller Sisters’ Creole Cooking Base. Add paprika, stiring well. Bring to a low simmer and add bay leaf.

Cook stirring occasionally, until sauce has reduced by 1/3 10 to 12 minutes.

Stir in shrimp and simmer until shrimp are opaque and cooked through, 4 to 6 minutes. Remove bay leaf.

Season with salt and pepper if needed, add fresh chopped Parsley and spoon over rice.

Garnish with green onions before serving.
